Winemaking
After manual harvest, and transport to the winery in small boxes (18kg-20kg), the bunches were destemmed and the grapes were macerated for 8 hours, preceded by a light pressing and 48 hour decantation. Indigenous fermentation, without temperature control and 7 months aging in used barrels.
Stage: 7 months with battonâge.
Bottling: June 2019 (not glued, unfiltered or stabilized)
Soil: Granitic origin
Production: 2,200 bottles numbered 0,75L
