Manual harvest during the night and dawn. Chilling the grapes, 6-8º, for 24 hours in the cellar. Low pressure press to extract only the “tear” Immediate separation, after pressing, of the must from the masses. Spontaneous fermentation in stainless steel vats, without the addition of yeasts with only foreign yeasts. No corrections and no wood.
