Saroto 2018 White
Saroto is the first solo act of the newly created Arribas Wine Company. It is born from the passion and energy of the young winemaking team, enchanted by the old vineyards in the Arribas of the Douro River. This wine is an attemp at capturing and expressing the terroir of this region, applying traditional techniques and emplying a principle of minimal intervention.
The 2018 growing season was atypical and difficult, with high disease pressure mainly due to low temperature and high relative humidity. Over the first weekend of August the country was subjected to very high temperatures that caused damage and loss in crop yield. The white grapes used to make Saroto White 2018 were hand harvested into 20 Kg cases over the last week of August and were foot trodden in a tradicional lagar, where they were skin macerated for 2 days. After this period, the grapes were pressed and the juice was transfered directly into used french oak barrels. Kept in barrel over lees for 7 months, the juice fermented naturally with indigenous yeast and without temperature control (wild fermentation) finishing both alcoholic and malolactic fermentations.
