Harvest by hand. Grapes from a single vineyard of Encruzado grape variety. Total destemming and pressing. Selection of the grape must and cooling at low temperatures for 24h.Fermentation only in stainless steel vats, with temperatures rounding the 15ºC for 20 days with indigenous yeast. Unoaked.
