Retro 2014 Red
After contributing for the creation of some of the best wines of the Dão region, oenologist Lúcia Freitas returned to the family Estate to elaborate projects that harmonize the respect for the traditions with the dream of deepening the extraordinary character of the wines and the region she knows so well.
Concept
Retro is intended to be a wine exactly as the name suggests… an old-fashioned Dão! Despite the predominance of varieties mentioned above, there are others, in small quantities. In the past, Dão wines were blended in the vineyard, made in mill with foot treading, still with the stalk and fermented very slowly with indigenous yeasts. The intervention of winemaker (which at the time did not exist!) was minimal. This way, we get a wine with a lot of typicality. It is definitely a Dão!
Vinification
Harvest of all varieties together into small 20Kg boxes. Once the berries were placed in the mill whole, an initial step was made in order to break the berries, so that the "juice", with a high concentration of sugars, entered contact with the existing yeasts in the skin of the berry and thus originate a fermentation in a natural way. The fermentation was very slow and when it was finished, pressing was carried out with transfer of the tear must into used French oak barrels, where he stayed for 12 months.
