Respiro Natural 2019 White
Vinification
Four centennial vineyard field blend. A white without addition of sulfites.
Year total rainfall at Cabeças do Reguengo - 690 litres/m2.
Autumn and Winter mild and rainy. Hot March with little rain. Cool and rainy April, May and part of June fresh and wet. Precocious budding. May and part of June fresh and moisten. July and August with some heat but not too much.
Hand-picked harvest 29 August and 4 September. Grapes crushed, pressed, and must decanted with chestnut flowers addition.
Natural fermentation without any sulphur and ageing for 9 months in tow very old oak barrels (225 litres) and 1 000 litres fudre. Bottled at 28 April 2020. No malolactic.
