Winemaking

The maturation phase occurred very early and allowed a harvesting start at the end of August. The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were
pressed with the whole bunch, at low pressure. The must fermented 80% in used barrels of 500L and 400L of French oak (must from old vines) and 20% in stainless steel vats (grape must
remaining) for 8 months.
