Four hectares, amphitheater layout; re-structured in the year 2000.
Manual in boxes of 20 Kg during the period of the night and morning taking advantage of the mild temperatures. Exclusively with grapes from our vineyards. Soft pneumatic pressing in an inert environment and at low temperatures to conserve the full aromatic potential of the grapes. Cold decanting for 48 hours. Fermentation with local selected yeasts at 14-16 degrees Celsius for 6 weeks in small 1500Lt vats.
During 10 months in contact with the fine lees in small deposits of 1500 liters with periodic battonage and controlled temperature followed by bottling and stage of 1 month in bottle.

|Clear, citrus colored, with light greenish highlights.|
|Delicate, fresh, with notes of mango and orange blossom.|
|Is accompanied by the well present but involved acidity with remarkable structure and slight minerality.|
|Serve at 10ºC to consume at 12ºC.|
|Seafood and fish, Asian food, soft cheeses. In Any time makes very good company.|
