Exclusively with our vine's grapes. Soft pneumatic pressing in an inert environment at low temperatures in order to preserve all the aromatic potential of the grapes. Cold decanting for 48 hours. Fermentation with selected yeast from the region at 14-16ºC for 6 weeks in small vats of 1500 to 3000 liters.
For 10 months in contact with fine lees in small vats of 1500 to 3000 liters with periodic battonage at controlled temperatures followed by bottling and staging of 1 month in the bottle.
