Maria Izabel 2017 Rosé
The maturation phase occurred later because there is lack of water in the soil and heat causing the harvest to take place later in early September. The grapes harvested rested for 24 hours in a refrigerator container at 8º C in order to protect the integrity of the bunches. Followed by selection in carpet of choice were introduced into the vat with whole bunch, where the drained wort was drained to proceed there is fermentation. Thus we allow to have a more fresh, acid and little rich in color. Fermented during 4 months at low temperature, remaining in the lees during the winter.
