The maturation phase occurred very early and allowed a harvesting start at the end of August. The grapes were harvested, after a rigorous selection in the vineyard and in the cellar, the grapes were
pressed with the whole bunch, at low pressure. The must fermented and staged in stainless steel vats and remaining for 5 months.
