Winemaking
Manual harvest for 20kg boxes. At the entrance to the cellar, a choice table in order to select the best bunches. Fermented with native yeasts in cement deposits and the temperature between 26 - 28ºc. This was followed by a 2-week post-fermentative maceration period, which promoted a greater volume of the mouth and subsequent malolactic fermentation in a cement vat. The wine aged for 12 months in used French oak barrels.
