Espumante Soito Blanc de Noirs Sparkling
To a rhythm only passion can justify, Soito Wines, created in 2013, has already conquered national and international trophies, having been considered one of the iconic producers of the Dão - one more hint that something very serious is about to happen in this fascinating region.
Terroir
The vines, planted in the sub-region of Terras de Azurara, enjoy a typically Mediterranean climate, on granitic soils.
The vineyard was generous and balanced, with a density of 3500 to 4000 feet per hectare, it provided 5 tons of grapes per hectare.
Viticulture and Winemaking
Vine management: Double cord, single cord and guyot.
Vinification and Aging: The vinification is classic, with the first fermentation in stainless steel vats at a controlled temperature of 16º. The printing was carried out in August 2018. It aged in a cellar at a cool temperature until its degorgement, which was carried out in December 2020.
