Vinha Centenária Grande Reserva 2017 White
Technology
The technology is minimalist, in order to allow the expression of grapes from the centennial vineyard. One third of the must fermented in French oak barrels from the famous cooperage Seguin Moreau and the rest fermented in a stainless steel vat at around 18º C. After the fermentation, the fine lees were beaten, in order to improve and complex wine. A minimum dose of sulfur dioxide was used, necessary to avoid oxidation.
Bottling was done in June, after a slight gluing and final filtration before bottling. It was not treated by the cold and may therefore form a slight precipitate over time, which in no way affects the quality of the wine.
This wine has the peculiarity, very rare, of being great for drinking young, due to the delicacy of its aroma and great aging potential, thanks to its acidity, alcohol content and powerful structure. With the time of bottle it will gain great complexity, assuming another dimension.
