Alto DO-JOA 2015 White
The vines are centenary, of ungrafted planting of more than 120 years old, where there’s an abundance of more than twenty different types of castes. The schist soils live at 750m of altitude and the climate offers a wide range of temperatures in the maturation period. Given the vine’s age and the tradicional processes of grafting and wine varieties, it is possible to find different castes originating on the same vine, which makes the viticulture process even more interesting and results in a final product that is curious, unique and with peculiar complexity.
The harvest consist in grapes selected from diferent castes (about ten). Soft crushing process. Tanning occurs in 500 liter French Oak casks, for 4 weeks. Staging of 18 months in used French Oak casks. Followed by bottling.
