Mediterranean Roasted Lamb

An intense, rich and full of character dish. The lamb with a particular flavor, already intense, with the caramelized oven giving more layers of flavor, such as the "arroz com miúdos", which with that earthy, ferric flavor, pulls through the structure of the wine. It is a dish for wines of a marked character, structure, depth and complexity. Some whites, exceptional in structure and complexity, may be able to meet part of the challenge. A high quality, long-lasting sparkling wine is an option to consider.
