Vegetable Stew with Chorizo and Poached Eggs

A dish very rich in textures, with some crunchiness of beans and vegetables. Very aromatic in a smoked style, due to the ingredients, especially the sausages. Earthy flavor of beans. Set of flavors with some complexity and good persistence. Wines of good complexion are required, with velvety and some greasiness. Some white wines, which undergone wood, may balance the persistence and flavor style of the dish. In reds, also some complexity is advised. Due to the broth, the wines must have a firm structure, so as not to be overwhelmed by the surrounding of the dish.
